CHICKEN STRATA 
8 slices day old bread
2 or 3 c. diced, cooked chicken or turkey
1/2 c. chopped onion
1/2 c. chopped green pepper (chopped by hand with knife)
1/2 c. finely chopped celery (chopped by hand with knife)
1/2 c. mayonnaise
3/4 tsp. salt
Dash pepper
2 beaten eggs
1 1/2 c. milk
1 can condensed cream of mushroom soup
1/2 c. shredded sharp process American cheese

Butter 2 slices bread; cut in 1/2" cubes and set aside. Cut remaining bread in 1" cubes; place half of unbuttered cubes in bottom of 9"x13" baking dish. Combine chicken, vegetables, mayonnaise and seasonings; spoon over bread cubes. Sprinkle remaining unbuttered cubes over chicken mixture. Combine eggs and milk; pour over all. Cover and chill 1 hour or overnight.

Spoon soup over top. Sprinkle with buttered cubes. Bake in slow oven, 325 degrees for 50 minutes or until set. Sprinkle cheese over top last few minutes of baking. Makes 6 servings.

I'm going to add another 1/2 cup milk and bake it 80 minutes. I haven't tried it yet, but I think it would be better.
