SPINACH SALAD VINAIGRETTE | |
1 to 2 bunches fresh spinach, cleaned 1/4 c. (each) real bacon bits, sliced water chestnuts, shredded Swiss cheese 1/2 c. sliced fresh mushrooms 1 hard-boiled egg, grated 1 c. dressing Toss spinach, mushrooms and chestnuts with dressing; top with bacon bits, cheese and grated egg. DRESSING: 3 1/2 c. oil 1/2 c. white vinegar 1 1/2 tsp. dry mustard 1/2 clove (minced) garlic 1/4 c. chopped medium onion 1/2 tbsp. salt 1/4 tsp. pepper Combine at least 1 day before using. |
