OATMEAL - CHOCOLATE CHIP COOKIES 
1/2 c. reduced-calorie butter
1/2 c. brown sugar, firmly packed
1 egg
1 tsp. vanilla extract
1 1/4 c. all-purpose flour
1/4 tsp. baking soda
1/4 tsp. salt
3/4 c. quick cooking oats, uncooked
1/4 c. semi-sweet chocolate morsels
Vegetable cooking spray

Cream butter and sugar at medium speed of an electric mixer or until blended. Add egg and vanilla; beat well. Combine flour, soda, and salt; add to crumbed mixture, mixing well. Stir in oats and morsels. Drop dough by level tablespoonsful 2 inches apart onto baking sheets coated with cooking spray. Bake at 375 degrees for 8 minutes. Cool on wire racks. Store covered. Yield: 32 cookies (about 74 calories per cookie).
