LOUISIANA'S SENATOR JOHN
BREAUX'S SEAFOOD GUMBO
 
1 c. flour
1 c. cooking oil
2 c. onion, chopped
1/2 c. green onion tops, chopped
1/4 c. parsley, chopped
2 1/2 qts. hot water
1 tbsp. salt
1 tsp. cayenne or red pepper
1 lb. crab meat or 2 cans crab meat
2 lbs. shrimp, raw & peeled
1 pt. oysters with liquid

Roux: Mix flour and oil together in a 4 cup measure. Microwave on high 7 minutes. Stir well, microwave on high 30 seconds, stir again and cook 30 seconds more. Roux will be dark caramel.

Gumbo: In large cooking pot, add hot water, roux, onion, green onion tops, parsley, salt and pepper. Cover and cook on high 15 minutes. Add crab meat, and cook on high 15 minutes. Add shrimp and oysters. Cook on medium 20 minutes. Serve as a soup with rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
