ZESTY HEALTH SALAD 
1 sm. cabbage
1 lg. carrot
1 sm. onion
1/2 head sm. lettuce
1 green pepper (optional)
1 med. cucumber
1/3 c. red wine vinegar
1/3 c. vegetable oil
1/4 tsp. salt
1/4 tsp. sugar
1/8 tsp. pepper

In a large bowl, shred cabbage, lettuce, carrot. Slice cucumber thin. Cut green pepper in thin slices lengthwise. Slice onion very thin and break into rings.

DRESSING: Dissolve sugar and salt in vinegar. Add remaining ingredients and shake well. Pour over vegetables and toss. Let sit 1/2 hour. Toss again and serve. One or more of the following may be added: sliced radishes, escarole, chicory, Romaine, red cabbage.
