GRILLED SWORD FISH WITH CAPERS, LEMONS AND GARLIC | |
4 1/2" thick swordfish steaks, 4 oz. each 1 tbsp. plus 1 tsp. olive oil Salt & fresh ground pepper 1-2 garlic cloves, minced 2 heaping tbsp. capers 6 tbsp. fresh lemon juice Preheat broiler. Brush swordfish steaks on both sides with the garlic in a mortar and pestle and add capers. Mash together with garlic and add the lemon juice and 1 teaspoon olive oil. Blend together well. Season with pepper. Broil fish 3 or 4 inches from flame for 2-2 1/2 minutes on each side. Remove from heat. Spoon caper - lemon mixture over each steak. Serve hot or chilled if preferred. |
