STRAWBERRY OR RASPBERRY PIE

CRUST:

Make well in 1 cup flour. Put in:

1 egg yolk
1/2 c. soft butter
1 tbsp. sugar
1 tsp. lemon flavoring

Mix like pie crust. Pat into a 9-inch pie pan and prick with a fork. Bake at 350 degrees for 20 minutes; cool.

FILLING:

1 (8 oz.) pkg. cream cheese
1 c. powdered sugar
1 pt. whipping cream
1 qt. strawberries, fresh, or 1 qt. raspberries, fresh

Mix cream cheese and powdered sugar together and fold in the whipping cream after whipped. Place one half of filling on cooled crust. Place half of berries on top of this, saving nicest berries for top. Place rest of filling and then top off pie with berries. Place berries carefully. Makes an elegant looking pie. Refrigerate.
