MASHED POTATO CASSEROLE 
1 (8 oz.) pkg. cream cheese
4 to 6 c. mashed potatoes, mashed with milk and butter
1 beaten egg
1/3 c. chopped onion
1 tsp. salt
1 tsp. pepper
1/4 pt. sour cream
1/2 to 1 c. shredded Cheddar cheese
1/2 to 1 c. crumbled crisp bacon

Combine all ingredients except cheese and bacon. Place in a 9 x 13 baking dish. Garnish with cheese and bacon.

Serves 8. Can do ahead.

May be baked immediately at 350°F for 45 minutes or stored in the refrigerator to bake the next day. Cover with plastic wrap when storing but this recipe has all the ingredients that make baked potatoes so good but may be made ahead of time and get the mess cleaned up, then bake the next day.
