GARLIC CHICKEN 
2 cut up chickens
3/4 c. olive oil
1/2 tsp. each marjoram, oregano, summer savory rosemary
1 tsp. thyme
40 cloves garlic separated but not peeled

Preheat oven to 375 degrees. Brown chicken pieces in 2 tablespoons olive oil and broil a little under the broiler. Return all chicken to an iron Dutch oven casserole and add herbs, garlic cloves and rest of oil layered between pieces of chicken.

Place a sheet of aluminum foil between the dish and lid and bake for 1 hour 10 minutes or until done. Do not lift the lid while chicken is baking. Spread baked garlic cloves on pieces of French bread.
