BISCUIT MIX 
A do-it-yourself mix as versatile as the store-bought kind. And it doesn't need refrigeration. Makes about 7 cups.

6 c. sifted all-purpose flour
2 1/2 tbsp. double-acting baking powder
1 tbsp. salt
1 c. solid all-vegetable shortening

In a bowl, mix together flour, baking powder and salt. Cut in shortening with pastry blender or 2 knives until mixture looks like coarse meal. Store in covered container such as empty 3-pound shortening can. No refrigeration is necessary.
