CRANBERRY-CHERRY SALAD 
1 c. fresh or frozen cranberries
1/2 c. sugar
2 tbsp. orange rind
1 1/2 c. boiling water
1 (3 oz.) pkg. cherry gelatin
1/2 c. cold water
2 c. chopped celery
2 c. chopped unpeeled apples
1 c. chopped walnuts

Grind cranberries. Add sugar and orange rind. Mix well. Let stand 30 minutes. Stir in 1/2 cup boiling water to dissolve sugar. Refrigerate. Stir gelatin into 1 cup boiling water until dissolved. Add 1/2 cup cold water. Chill until slightly thickened. Stir in cranberry mixture, celery, apple and walnuts. Pour into bowl or 6 cup mold. Chill until set. Serves 12.
