FRUIT COBBLER 
1 c. butter
3 eggs, well beaten
2 c. flour
1 1/4 c. sugar
1 tsp. vanilla
1 can prepared pie filling (preferably peach)

Cream butter and add sugar slowly. Add vanilla, eggs and then flour. Batter will be creamy. Spread mixture except for about 1 cup into greased pan. Spread pie filling and dot with remaining batter. Bake at 350 degrees for 35 to 40 minutes. (I double the batter recipe and use 3 cans filling in an 11 x 15 inch pan. Bake about 1 hour and 10 minutes or until toothpick inserted comes out almost clean.) Serve with ice cream or whipped topping if desired.
