FRESH SHRIMP CHOWDER | |
2 lb. fresh shrimp 1 c. chopped celery 1 c. diced raw potatoes 1 med. carrot, diced 1 lg. onion, minced Thyme, salt, and pepper to taste Boil, clean and strain shrimp, putting liquid aside. Saute vegetables in 2 tablespoons of butter, or a little salt pork may be added, if desired. Do not brown. Add 4 cups of water and simmer 1/2 hour. To this, add the shrimp liquid and the shrimp which have been cut into quarter pieces. More water may be added to this if it appears too thick. Allow to simmer for 1/2 additional hour, add thyme, pepper and it is ready to serve. Will serve 6 people. |
