5 c. thinly sliced cucumbers
2 c. sugar
1 c. white vinegar
Cut cucumbers and put in layers in a colander with salt on each layer. let stand for 4 or more hours. Be sure to put a bowl under colander for drainage. Do not boil sauce. Mix sugar and vinegar. Heat just enough dissolve. Add 1 tablespoon pickle spices to taste. Be sure to rinse off salt from cucumbers thoroughly. Add 1 cup diced onions and 1 cup diced bell pepper and enough cayenne pepper (chopped or whole) to taste. Let mixture, cucumbers and syrup stand overnight; then put in small freezer bags and freeze. When frozen you have a finished product. Thaw before serving.
