CHEESE OMELET 
2 tbsp. butter
6 eggs
1/2 tsp. salt
1/8 tsp. black pepper
1/3 c. milk
1 tbsp. onion, minced
1 1/4 c. sharp cheese, shredded

Heat butter in large heavy fry pan over moderate heat. Beat eggs until foamy. Stir remaining ingredients except cheese into eggs.

Pour mixture into hot pan. Sprinkle cheese evenly over top. Cook over low heat. Lift edges and tip pan as needed, to let uncooked mixture flow underneath. Cook until set, 12-15 minutes.
