RED VELVET CAKE 
2 eggs
1 1/2 c. sugar
2 1/2 c. plain flour
1 c. buttermilk
1 1/2 c. oil
1 tsp. vanilla
1 tsp. baking soda
1 tsp. vinegar
1 tsp. salt

Mix above ingredients; add 2 large bottles of red food coloring. Pour into 3 layers and bake at 325 degrees for 40 minutes. Test for doneness with toothpick.

ICING:

1 box 4X sugar
1 (8 oz.) pkg. cream cheese, softened
1 tsp. vanilla flavoring
1 stick butter, softened
1/2 c. chopped pecans

Blend first 4 ingredients; then fold in pecans.
