SOUTHWESTERN RED SNAPPER 
2/3 c. picante sauce
2/3 c. chopped onion
2 chopped cloves of garlic
Red snapper fillets
1 chopped med. green pepper
1 med. tomato, chopped

In skillet combine picante sauce, onion and garlic and bring to a boil. Reduce heat and add fish and green pepper. Cover and simmer for 10 to 15 minutes. Remove fish and cover. Cook juice for another 1 to 2 minutes. Add the tomato and pour sauce over fish to serve.
