LEMON DELIGHT CAKE 
6 eggs
2 1/2 c. sugar
1 lb. butter
3 oz. lemon extract
4 c. plain flour
1 1/2 tsp. baking powder
1 pkg. white raisins
1/4 lb. red cherries
1/4 lb. green cherries
1/4 lb. red pineapple
1/4 lb. green pineapple
4 c. chopped pecans

Cream sugar and butter, add eggs one at a time. Stir in extract a little at a time, sift flour and baking powder together (leaving one cup of flour for fruits and nuts). Roll fruits and nuts in flour and add to batter and mix well.

Bake at 300 degrees for 1 1/2 to 2 hours or until done.
