CHEESE - GRITS CASSEROLE | |
1 tsp. suet 1 c. hominy grits (not instant) 1 c. coarsely shredded mild Cheddar, Muenster, Gouda, Edam, or Swiss cheese 1/4 tsp. onion or garlic powder 2 tbsp. butter 1 (4 oz.) can chopped mushrooms, drained 1 c. diced cooked chicken or ham 1 c. thinly sliced celery 1 (6 oz.) pkg. garlic-flavored processed cheese 1/2 c. crushed potato or corn chips Paprika In a saucepan bring 5 cups of water and salt to a boil. Slowly add grits; cover and simmer 25-30 minutes, stirring occasionally. Add cheese and stir until melted. Season with onion powder. Heat butter and saute mushrooms and meat a few minutes. Layer grits, meat mixture, celery (make last layer grits) in a 2-quart casserole. Arrange cheese slices on top and sprinkle with corn chips. Bake in a 350 degree oven 20-25 minutes. |
