LAMB CHOPS & POTATOES 
4 to 6 lamb chops
4 to 5 potatoes, peeled & sliced about 1/8 inch thick
1 to 2 onions, sliced in rings
1 to 2 green peppers, sliced in rings
1 sm. can stewed tomatoes
Salt & pepper

Cover bottom of large shallow baking pan with sliced potatoes. Season with salt and pepper. Spread green pepper rings on top of potatoes. Cover layer of green peppers with a layer of onion rings. Pour can of stewed tomatoes over vegetables. Season lamb chops with salt and pepper and lay on top of vegetables.

Fill pan 1/2 to 3/4 full with water. Cover pan with aluminum foil and bake for 2 hours at 400 degrees. Remove foil last 1/2 hour to allow lamb chops to brown (both sides).
