FRIED BARBECUE CHICKEN 
1 broiler-fryer chicken (quartered)
1/2 c. flour
1 tsp. salt (divided)
1/4 tsp. chili powder
1/16 tsp. pepper
1/4 c. shortening
1/2 c. catsup
1/4 c. brown sugar
1/4 c. butter
1 tbsp. minced onion
3 tbsp. vinegar
2 tsp. Worcestershire sauce
2 tsp. prepared mustard
1 tsp. lemon juice

In plastic bag, mix together flour, 1/2 teaspoon of the salt, chili powder and pepper. Add chicken, one piece at a time, shaking to coat. In fry pan, place shortening and heat over medium temperature until melted. Add chicken and cook, turning, about 10 minutes or until brown on all sides. In saucepan, make sauce by mixing together catsup, brown sugar, butter, onion, vinegar, Worcestershire sauce, mustard, lemon juice and the remaining 1/2 teaspoon of salt. Simmer sauce, uncovered over low heat 20 minutes. Pour sauce over chicken; cover and simmer, basting with sauce frequently, about 1 3/4 hours or until fork can be inserted in chicken with ease. Makes 4 servings.
