PEANUT BUTTER PIE (LIGHT) 
1/3 c. sugar
1/4 c. cornstarch
3 c. milk
1/4 c. creamy peanut butter
1/3 c. packed brown sugar
1/2 tsp. salt
4 egg yolks
1 tbsp. butter

Mix all ingredients; cook over medium to medium-high heat, stirring constantly. Add 1 tablespoon vanilla extract; let cool. Beat in a small carton of Cool Whip. Pour into baked and cooled 9-inch pie shell. Light and excellent!
