SNOWBALL CAKE 
2 sm. pkgs. Knox gelatin
2 tbsp. cold water
1 c. hot water
1/2 tsp. salt
1/2 c. sugar
2 tbsp. lemon juice
20 oz. frozen strawberries
1 lg. and 1 sm. Cool Whip
1 med. size angel food cake
1 c. flaked coconut

Dissolve gelatin in cold water. Add hot water, sugar and salt and dissolve. Add lemon juice and fruit. Refrigerate 10 minutes. Add large Cool Whip. Break apart the cake into small pieces and add to mixture. Line fluted pan with plastic wrap. Pat mixture into pan. Put plastic wrap on top of this. Refrigerate overnight. When ready to serve, turn upside down and frost with small Cool Whip. Sprinkle with coconut on top.
