POTATO CASSEROLE 
1 (2 lb.) pkg. frozen southern style hash browns, thawed
2 c. crushed Ritz crackers or corn flakes
1 c. sour cream
4 to 6 tbsp. chives
1 can cream of chicken soup
3/4 stick butter
2 c. cheddar cheese, shredded
1 can cream of mushroom soup

Combine all ingredients except crackers, butter and 1 cup of the shredded cheese. Place in large, greased baking pan (9 x 13 inch). Cover the top with remaining cheddar cheese, then dot with cut up butter. Bake at 350 degrees for 1 hour. Cover the top with cracker crumbs or corn flakes, continue baking until browned.
