SOUTHWEST CHICKEN | |
4 chicken breasts, skinned, split and boned 2 tbsp. butter 2 cloves garlic, minced Salt and pepper to taste 8 slices tomato 2 avocados peeled and sliced 8 slices Swiss cheese Pound chicken breasts between sheets of wax paper. Rinse and pat dry. Melt 2 tablespoons butter with garlic and brush meat. Season with salt and pepper. Broil, turning occasionally and basting with butter until golden brown. Top each breast with 1 tomato slice, 3 or 4 avocado slices and 1 slice Swiss cheese. Put under broiler 60 seconds to melt cheese. |
