FRESH PEACH PIE 
5 c. sliced fresh peaches, peeled
1-2 c. sugar
3 tbsp. cornstarch
1 c. water
Few drops yellow food coloring
1 (10") baked pie shell
1 c. heavy cream, whipped & sweetened

Crush 1 cup peaches. Mix sugar and cornstarch in saucepan. Stir in water gradually until smooth. Add crushed peaches. Cook and stir over medium heat until thick and clear. Add food coloring. Cool and stir in remaining peaches. (Drain them if you use frozen peaches.) Pour into baked pie shell. Chill. Serve with whipped cream.
