COTTAGE CHEESE PESTO 
2 c. lightly packed fresh basil
1/2 c. cottage cheese
Minced garlic to taste
3/4 c. grated Parmesan cheese
3/4 c. buttermilk
3 tbsp. olive oil
1/4 c. pine nuts (optional)

Clean and light chop basil. Put all ingredients in a food processor or blender; combine until creamy. (If using a processor, be careful not to process too long; a blender is better.) Serve over your favorite pasta. This pesto may be frozen.
