HOMEMADE PIZZA
CRUST:

1 pkg. active dry yeast
1 c. warm water
1 1/2 tbsp. sugar
1 tbsp. solid white shortening, melted
1 1/4 tsp. salt
3 - 3 1/2 c. flour
Vegetable oil

Stir yeast into warm water until dissolved. Add sugar, melted shortening and salt. Stir in 2 cups of flour. Gradually add remaining flour to form a soft dough. Turn onto a lightly floured surface and knead until smooth and elastic. Let dough rest about 5 minutes in a covered dish. Brush a 14" pizza pan with oil. Roll dough to flatten. Press evenly over bottom of pan. Cover with sauce and other favorite toppings and cheese. Bake at 425 degrees for 15 to 20 minutes.

SAUCE:

1/2 c. finely chopped onion
2 tbsp. pure vegetable oil
2 cloves garlic, minced
1 (6 oz.) can tomato paste
2 1/2 c. water
1 1/2 tsp. oregano
1 tsp. salt
1 tsp. sugar
1/2 tsp. basil
1 bay leaf
Dash pepper

In 1 1/2 quart saucepan, saute onion in oil until golden. Add garlic; cook 1 or 2 minutes longer, stirring. Add remaining ingredients; simmer slowly uncovered about 1 hour or until thick. Remove bay leaf. Makes 2 cups of sauce.
