COD CREOLE 
1 lg. onion, chopped
1 lg. green pepper, cut in strips
1 lg. clove garlic, minced (optional)
2 tbsp. oil
1 can (16 oz.) tomatoes, cut up and almost all the tomato juice
Celery, sliced
Mushrooms, sliced
1/4 tsp. curry powder
1 sm. bay leaf, crumbled
1/2 tsp. each thyme and salt
1/4 tsp. pepper
1 lb. frozen cod or other fish fillets

In large skillet over medium heat saute onion, green pepper and garlic in oil about 5 minutes or until tender. Stir in tomatoes, bay leaf, thyme, salt and pepper. Cover and simmer 15 minutes. Meanwhile let fish stand at room temperature to thaw slightly; then cut in 1 inch cubes. Add to sauce; cover and simmer 10 to 15 minutes or until fish flakes easily with fork. Makes 4 servings. Per serving: 198 cal, 22g pro, 11g car, 7 g fat, 92 mg chol.
