STRAW AND HAY 
1 cup skim milk
1/2 cup low fat cottage cheese
1 Tbsp. cornstarch
1/2 cup grated Parmesan cheese
1/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. nutmeg
Cooking spray
4 ozs. lean cooked ham
1 clove crushed garlic
1/2 cup frozen English peas
4 ozs. uncooked fettuccine
4 ozs. uncooked spinach fettuccine

Combine milk, cottage cheese and cornstarch in food processor or blender. Process until smooth. Transfer mixture to non-stick skillet. Place over medium heat and add 1/4 cup Parmesan cheese, salt, pepper, and nutmeg. Stir until cheese melts. Set aside. Coat a large non-stick skillet with cooking spray, place over medium heat until hot. Add ham and garlic, saute 2 minutes. Stir in peas and saute 2 minutes. Remove from heat and stir in milk mixture. Set aside. Cook fettuccine, drain and place in large bowl, pour ham mixture over tossing gently, sprinkle with remaining 1/4 cup Parmesan cheese. Serve immediately.
