EASY CARROT CAKE 
2 c. sugar
1 c. oil
4 eggs
2 (4 1/2 oz.) jars baby carrot food
2 c. flour
1/2 tsp. salt
1 1/2 tsp. baking soda
2 tbsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. cloves
1 tsp. vanilla

Combine sugar and oil; beat well. Add eggs, carrots and vanilla; beat well until smooth. Combine next 6 ingredients; add to creamed mixture beating well. Pour into 2 greased and floured pans or sheet cake pan and bake at 350 degrees for 35 minutes or until tender. Cool in pan about 10 minutes.

CREAM CHEESE FROSTING:

1 (8 oz.) pkg. cream cheese, softened
1/2 c. butter
1 tbsp. vanilla
4 c. powdered sugar
1 1/4 c. pecans
