TUNA CHOWDER 
6 tbsp. butter
6 tbsp. flour
3/4 tsp. salt
1/2 tsp. pepper
3 c. milk
2 (6 1/2 oz.) cans tuna in water, drained (save juices)
2 med. potatoes, sm. diced & boiled (save water, 1 1/4 c.)

Heat butter over medium heat until melted. Add flour, salt and pepper. Cook over medium heat, stirring constantly until smooth and bubbly. Add milk, tuna juices and potato water. Blend until boiling. Lower heat. Flake tuna into liquid using a fork. Add potato. Heat through. For thinner soup, add water 1/4 cup at a time until desired consistency.
