HONEY ORANGE DUCK | |
2 lg. or 4 sm. ducks 2 oranges, peeled and sliced thin 1 c. honey 1/2 c. lemon juice 1 tbsp. brandy (opt.) 1/2 tsp. powdered ginger 1/2 tsp. salt Salt and pepper 1 stick butter 1/4 c. brown sugar 2 tsp. orange peel, grated 1 tbsp. prepared mustard 1/2 tsp. pepper Wipe ducks inside and out; sprinkle cavity with salt and pepper. Divide sliced oranges and fill each cavity. Place breast down in roaster. Coat liberally with butter. Mix remaining ingredients and pour over ducks. Cover and roast at 325 degrees for 1 hour. Turn ducks, breast side up, and baste with honey mixture. Cover and roast 30 minutes more. Remove cover. Baste again and roast 30 minutes more. Serve with pan juices poured over. |
