MATZOS - MARROW BALLS 
2 tbsp. marrow fat (beef) or Crisco
2 eggs
1/2 tsp. salt
1/4 c. matzos meal
A grating of nutmeg

Split the bones and remove the marrow. Cream the marrow, add the eggs (well beaten). Season and add only enough matzos meal to shape easily into balls the size of a walnut. Try one in boiling water, if it does not hold together, add more meal. Drop into boiling soup 15 minutes before serving. Cracker crumbs or bread crumbs may be used in place of the meal.
