POTATO SALAD 
Dice and mix:

6 med. sized cooked potatoes
2 med. onion
5 hard boiled eggs

SALAD DRESSING:

2 egg yolks (beaten with a little milk)
Salt & pepper to taste
1 1/4 c. cane sugar
1 1/2 tbsp. corn starch
1/2 tsp. mustard
Slightly less than 1/2 c. vinegar
Slightly less than 1/2 c. water

Stir above salad dressing ingredients in saucepan and cook until it thickens. Add a large piece of butter and let dressing cool before adding to potato mixture.

If dressing is too thick, add a small amount of milk before adding dressing to potato mixture. Also, you can add some mayonnaise to make salad more moist if potatoes absorb some of original salad dressing.
