SAUCY FISH FILLETS | |
1 lb. flounder 1/2 c. flour 1 tsp. salt 1/2 tsp. pepper 2 tbsp. oil 8 tbsp. butter 2 tbsp. lemon juice 2 tbsp. finely chopped parsley Place flour, salt, pepper in plastic bag. Add fish fillets one at a time. Use 2 fry pans. Heat 1 tablespoon butter and 1 tablespoon oil over medium heat until hot. Add fillets turning once until golden. Cook 4 minutes transfer to platter. Add remaining butter, lemon juice and parsley to pan. Cook 1 minute. Pour over fillets and serve. |
