LUNCH - BOX CUPCAKES 
1/3 c. shortening
1/2 c. brown sugar
2 eggs, unbeaten
1 c. flour
1/2 tsp. salt
1/4 tsp. baking soda
1 tsp. baking powder
1 1/4 tsp. cinnamon
1/2 c. milk
1 c. uncooked oats
1/3 c. chopped nuts
1/4 c. raisins

Cream together shortening and brown sugar. Beat in eggs. Sift together flour, salt, soda, baking powder, and cinnamon. Add alternately with milk to the creamed mixture.

Fold in oats, nuts and raisins. Bake in a muffin tin (use paper baking cups) in a moderate oven (375 degrees) for 20 minutes. Makes 12. Frost or leave plain. Great for breakfast, too!
