TURKEY SCALLOPINI 
1 lb. turkey cutlets (8 to 10 cutlets)
Salt and pepper to taste
4 tsp. butter
2 tbsp. olive oil

Rinse cutlets and pat dry. Salt and pepper cutlets. Heat butter and oil in large skillet. Add cutlets in a single layer. Cook about 2 minutes on each side. Serve with rice or pasta.

I cooked and served this with green beans as a vegetable and sprinkled it all with Parmesan cheese (I just love to add cheese to everything). I also had a little salsa with it on the side. The whole thing was easy to prepare and tasty.
