CREAMY POTATO PUFF 
1 (8 oz.) cream cheese
4 c. mashed potatoes
1 egg, beaten
1/3 c. finely chopped onion or 1/2 tsp. onion powder
Dash of pepper

Combine softened cream cheese and hot potatoes; mix well. Add remaining ingredients; mix. Put in 1 quart greased casserole. Bake at 350 degrees for 45 minutes until lightly browned. Yield 6-8 servings.

This can be mixed up the day before and baked just before serving.
