ARTICHOKE DIP 
2 (14 oz.) cans artichoke hearts, drained
1 (4 oz.) can chopped green chilies
1/2 sm. onion, chopped fine
4 oz. Parmesan cheese, grated or Romano
3/4 c. mayonnaise (1/2 c. is enough)
1 sm. jar pimentos (optional)
1 can French fried onion rings

Cut up artichokes. Mix with remaining ingredients. Place in 8x8 inch pan or pie plate. Sprinkle with onion rings. Bake at 325 degrees for 25 or 30 minutes. Serve with Doritos or vegetables.
