TORTELLINI SALAD 
2 pkgs. frozen cheese (colored or plain) tortellini
1 (12 or 16 oz.) pkg. frozen mixed vegetables (your favorite kind)
1/2 c. light olive oil
9-10 cloves garlic, minced
3/4 c. Parmesan cheese

Suggestions: broccoli, red peppers, mushrooms.

Bring large pot of water to a boil. Add tortellini and the frozen vegetables. Boil medium high for 8 1/2 minute (until tortellini is al dente); drain. Saute the garlic in olive oil approximately 5 minutes. Combine pasta, vegetables and olive oil in large bowl and toss with Parmesan cheese. You can serve this hot or cold. Will serve a small army.
