GOURMET POTATOES 
2 c. shredded Cheddar cheese
1/4 c. butter
1 1/2 c. sour cream
1/3 c. green onions
1 tsp. salt
1/2 tsp. pepper
6 med. potatoes, shredded
2 tbsp. butter

Melt cheese and 1/4 cups butter. Add sour cream, onions, salt and pepper. Set aside. Place sauce over potatoes in 2 quart casserole. Pour sauce over potatoes, dot with 2 tablespoons of butter. Bake for 35 minutes at 350 degrees. Serves 6 to 8.
