MARSHMALLOW FROSTING 
3 egg whites
2 1/4 c. sugar
3/4 tsp. cream of tartar
1 1/3 tbsp. vanilla
3/4 c. boiling water

Combine egg whites, sugar, cream of tartar and vanilla. Mix at low speed then add boiling water while mixer is at low speed. When all water is added turn to high speed and beat until peak stands.

I made this today and it turned out great! Made a mountain of frosting... enough to generously frost two cookie sheets of brownies... Tasted great and wasn't grainy. It did take over 7 minutes to whip. Be patient and get a good mixer! This was with my Kitchen-aid stand mixer. Loved that I didn't have to cook the eggs over a double boiler OR melt the sugar! The boiling water did that! I would add about half the vanilla next time-but I have Mexican vanilla and it tended to taste boozy. Otherwise, right on! Thanks for the great recipe!
