POSOLE WITH PORK 
3 lbs. boneless pork, cut into chunks
6 c. water
5 c. hominy (half yellow, half white)
1 c. chopped onion
2 tsp. leaf oregano
3 chili pods or 3 tbsp. chili powder
1 1/2 to 2 tsp. salt (or to taste)

Place pork and water in a saucepan and cook, covered, until meat is tender, about 1 hour. Add hominy, onion, oregano, chilies, and salt, tasting for salt. Simmer over low heat for 20 to 25 minutes. Serves 8 to 10.
