CHINESE MINUTE CHICKEN 
3 1/2 lbs. chicken, thighs or breasts (deboned and cut bite-size)
3 tbsp. flour
1/4 c. shortening
2 cloves garlic, crushed
1/4 tsp. pepper
1/2 tsp. sugar
1/2 c. oyster sauce
3/4 c. green onions, diced
1/2 c. Chinese parsley or cilantro (optional)

Coat chicken with flour and let stand 10 minutes. Heat shortening and garlic in large skillet - medium high, add chicken and fry until brown. Lower heat and add pepper, sugar, oyster sauce and green onion. Mix thoroughly and cook for 10 minutes. Garnish with Chinese parsley.
