PINEAPPLE COCONUT CAKE 
1 box pineapple cake mix
1 can crushed pineapple (including juice)
1 1/3 c. coconut
2 eggs
1/2 c. brown sugar

Combine cake mix, pineapple, coconut and eggs in large mixer bowl. Beat at medium speed for 2 minutes. Pour into greased 9 x 13 inch pan. Sprinkle with brown sugar and bake at 325 degrees for 45 minutes or until cake springs back when lightly touched.

TOPPING:

1/2 c. butter
1/2 c. sugar
1/2 c. evaporated milk
1 1/3 c. coconut

Bring butter, sugar and milk to boil; boil 2 minutes. Remove from heat; stir in coconut. Spoon over warm cake.
