NEW ENGLAND FISH CHOWDER 
2 slices bacon, diced
1/2 c. diced onion
2 sprigs parsley, destemmed and minced
1 c. peeled, diced, raw potatoes
4 c. cold water
Salt and pepper
1 lb. white fish fillets, covered (orange roughy, cod, haddock, halibut)
1 c. half and half

Saute bacon, onion and parsley in kettle or pan over medium. Add potatoes, water, salt and pepper to taste. Boil slowly covered 15 minutes. Reduce to simmer uncover and add fish and half and half and simmer 5 more minutes.
