CHEESY CHICKEN OVER RICE 
4 c. water
4 c. instant rice
4 boneless skinless chicken breasts
2 to 4 c. Mozzarella cheese, shredded
2 to 4 c. Cheddar cheese, shredded

In large casserole dish, combine water and uncooked rice. Stir until rice is evenly mixed in dish. Place chicken in liquid. Cover chicken and rice with cheese. Cover with aluminum foil. Cook at 350°F for 45 minutes to 1 hour.

Serves 4.
