MEXICAN CASSEROLE 
1 lb. ground beef
1 onion, chopped
1 tsp. salt
1/2 tsp. black pepper
1 (16 oz.) can tomatoes with juice
1 (1 1/4 oz.) pkg. taco seasoning
1 (8 oz.) can tomato sauce
1 (16 oz.) can chili beans, drained
1/2 tsp. dried marjoram
1 bay leaf
1/2 lb. sharp Cheddar cheese, shredded
Corn chips
1 bell pepper, diced

In a 10 inch skillet, saute beef and onion. Add salt, pepper, bell pepper, seasoning mix, tomatoes, tomato sauce, beans, marjoram, and bay leaf. Let simmer for 30 minutes. Remove bay leaf and pour into a 2 quart casserole. Preheat oven to 350 degrees. Sprinkle cheese over top. Top with corn chips. Bake for 20 minutes.
