OYSTER PATTIES 
1 stick butter
1 med. onion, chopped fine
1 rib celery
1/2 bunch green onion
1/2 c. flour
1 c. milk
3 dozen oysters, steam, curl, chop sm.
1 tsp. salt
Dash of red pepper
1/2 bunch parsley, finely chopped

Saute onion and celery in butter until soft. Add green onions and flour and blend well. Add milk, oyster and seasonings. Simmer over low heat until thick. Add chopped parsley. Pour thickened sauce into heated patty shells. Serve immediately.
